Ingredients:
1 box of your favorite vanilla or white cake mix
Cupcake tin & cupcake liners
2 cans of whipped white iciing
blue food coloring
1 tablespoon cocoa powder
3-4 teaspoons vanilla extract
1 bag of mini Cadbury eggs
Instructions:
Preheat oven to 350 degrees F. Line cupcake tin with cupcake liners.
Bake cupcakes per box instructions and let cool.
While the cupcakes cool, mix a little blue food coloring (2-3 drops) and your iciing in a bowl. Don’t go overboard with the food coloring here because you want it a nice pale blue shade like a robin’s egg.
Pipe or spread a generous amount of frosting on each cupcake.
Arrange 3 mini Cadbury eggs on top of each cupcake in the center.
In a small bowl, whisk together cocoa powder and vanilla extract. Then use a stiff paint brush to flick and splatter the chocolate “paint” on each cupcake, creating the speckled effect.
Enjoy!
