June Signature Snack - Patriotic Ice Cream Sandwiches

Every year, our June Pop-up theme is tied to the 4th of July and this year is no different. The 4th of July is one of our favorite holidays because we get to decorate with all things red, white, and blue and of course, we've started early (have your noticed the cute buntings hung on Eddy Street?) Plus, there's nothing more fun than cookout classics and freedom-themed food on Independence Day.

This year, we're going to show our love for the U.S. of A. in a big way with these delicious and super easy-to-make Patriotic Ice Cream Sandwiches. They are perfect because they take less than 10 minutes to make and you can prepare them ahead of time! Beat the Carson Valley heat and whip up a batch THIS WEEKEND before you head on over to our Reds, Blues & BBQs Pop-up at Eddy Street Vintage Market - June 18-20.

Ingredients:

  • Vanilla ice cream

  • Red, white & blue sprinkles

  • Premade chocolate chip cookies (or make your own from scratch)

  • A flat plate

Directions:

  1. Remove the ice cream from the freezer and let it thaw for 5 minutes so it’s easier to work with

  2. Combine the red, white and blue sprinkles together on a plate

  3. Take a scoop of the ice cream and place it between two cookies creating a sandwich

  4. Roll the sandwich edges in the sprinkles until the ice cream is covered

  5. Eat immediately or wrap in plastic wrap and freeze for later

  6. Enjoy!

May Signature Snack - Cowboy Cookies

It’s been said that the Cowboy Cookie was considered the first power bar of the plains. The delicious and nutritious cookie lasted for days on end and provided cowboys and cowgirls the energy they needed in the Old West. Nobody knows for sure if that's actually a tall tale or the truth, but one thing is certain, we love these chewy cookies filled with oats, coconut, pecans and chocolate chips. Grab your favorite cowgirl or guy and whip up a batch today! Then head on down to our Magnificent Seven 7th Birthday THIS WEEKEND for a western pop-up you don’t want to miss.

Ingredients:

  • 3/4 cup all-purpose flour

  • 1/2 tsp + 1/8 baking powder

  • 1/2 tsp + 1/8 baking soda

  • 1/2 tsp + 1/8 cinnamon

  • 1/4 tsp salt

  • 6 tbsp unsalted butter

  • 6 tbsp light brown sugar

  • 6 tbsp granulated sugar

  • 2 egg yolks

  • 1 tbsp milk (any percentage works)

  • Splash of vanilla

  • 3/4 cup rolled oats (don’t use quick oats or 1-minute oats)

  • 3/4 cup chocolate chips

  • 1/2 cup chopped pecans

  • 1/2 cup sweetened coconut flakes

Directions:

  1. Preheat your oven to 350* F.

  2. Whisk together the flour, salt, baking soda, baking powder, and cinnamon in a medium bowl and set aside.

  3. In a separate bowl, mix together softened butter, granulated sugar, and brown sugar. Beat until combined.

  4. Add the egg yolk, milk and vanilla and beat until combined.

  5. Add the dry ingredients to the wet ingredients and beat to combine.

  6. Stir in the pecans, coconut, chocolate chips and oats until combined

  7. Scoop out the chunky dough into 12 equal sized pieces, and place them evenly spaced on a cookie sheet. Bake at 350 on the center rack for 13-15 minutes, or until golden brown.
