Ingredients:

  • 1 box of your favorite vanilla or white cake mix

  • Cupcake tin & cupcake liners

  • 2 cans of whipped white iciing

  • blue food coloring

  • 1 tablespoon cocoa powder

  • 3-4 teaspoons vanilla extract

  • 1 bag of mini Cadbury eggs

Instructions:

  1. Preheat oven to 350 degrees F. Line cupcake tin with cupcake liners.

  2. Bake cupcakes per box instructions and let cool.

  3. While the cupcakes cool, mix a little blue food coloring (2-3 drops) and your iciing in a bowl. Don’t go overboard with the food coloring here because you want it a nice pale blue shade like a robin’s egg.

  4. Pipe or spread a generous amount of frosting on each cupcake.

  5. Arrange 3 mini Cadbury eggs on top of each cupcake in the center.

  6. In a small bowl, whisk together cocoa powder and vanilla extract. Then use a stiff paint brush to flick and splatter the chocolate “paint” on each cupcake, creating the speckled effect.

  7. Enjoy!
